I don't think you can.
You _can_ however tell WordPress to use a custom content directory.
In wp-config.php set WP_CONTENT_DIR and WP_CONTENT_URL. (The first
is the server path, the second is the browser URL.) This will fix
your problem for both themes and plugins.
