OK, figured it out - although have to say I've be using Photoshop and image editors for a long time and think perhaps Editor needs slightly better notes?
Perhaps: Thumbnail Settings (help) The thumbnail image can be cropped differently. For example it can be square or contain only a portion of the original image to showcase it better. Here you can select whether to apply changes to all image sizes or make the thumbnail different. After making your selection, click the Crop button [crop icon], then click Save. I wrongly assumed the crop icon was used in a similar way to say Photoshop, i.e. you clicked it, made you selection and then clicked Save.
