On another note, after creating the file associations, the icons for the files don't change from the 'unknown file' icon. Is this normal behaviour too? I've not yet installed 7-Zip manually from the original executable, so i'm not sure what the installer in manual mode is capable of.

well, if I were you, I'd try to install "the normal way" and see if there are file associations.

and if there is a problem with associations when 7-zip is installed silently, I'd report the problem on some 7-zip mailing list?
