Hi Chris, The best I have found is Facelift Image Replacement - FLIR which is accessible as it doesn't affect the source code.
Style your text as normal with CSS and then it uses PHP, JavaScript and font files to convert your text into images which it places over the text. Switch JavaScript off and it just degrades back to the standard CSS styled text. I've used it on a few websites now and I prefer it to sIFR. It's more efficient if you only use it on headings.
