Office 2007 uses the Word rendering engine which is quite a different beast from any browser, and even quite different to Outlook 2003 (which used the IE engine for rendering and Word for composing). You may find other tools like Campaign Monitor which run an instance and deliver the result, but I'd be very wary about trusting any arbitrarily created "emulations".
