Yes, after a conversation on the CMake users list it has been determined 
that CMake had a defect in the Fortran compiler verification and checks 
and it wasn't dealing with the Mac version compatibility options 
correctly. CMake has been patched but for now we have to manually set 
the right options which I have done.

That's fine, that output is just for the internal compiler tests that 
CMake does. To see the verbose output of the build of our sources either 
set the CMake variable CMAKE_VERBOSE_MAKEFILE to ON or more simply with 
make type Makefiles, which we have on all platforms, just pass VERBOSE=1 
to make like:

cmake --build <build-tree-path> -- VERBOSE=1

The failure on Lion is almost certainly because one of the components is 
not being built with the correct options.

That is going well now we have a proper CMake install on his system.

When he posts his DMG installer I'll have a browse through it and try 
and identify which components need rebuilding with correct options. I 
suspect Hamlib, fftw3 and the libgcc libraries (libgcc, libgfortran and, 
libquadmath) will all need rebuilding with the correct compatibility 
options.

I suspect we are close to identifying what is needed to get a reliable 
portable Mac application.

Did you try the DMG I sent you a couple of emails back on 10.7 & 10.9?
