To be more precise, AFAIK you want to know the path that is in the
environment of the Xquartz process, because that's how it searches for
any application you invoke through its menu. You can discover that with
ps (1):

$ sudo ps -p $(pgrep Xquartz) -E | tr \     \\n | grep ^PATH

on my system yields: 

        PATH=/opt/X11/bin:/usr/bin:/bin:/usr/sbin:/sbin
