You should have found the option in the X-Quartz preference. You have 5 submenus in the preference window, the first one ”entries” (I suppose, I have the French version only) offers to emulate a three-button mouse. You activate this option. Then middle button and right button are emulated by pressing CMD or ALT buttons while clicking (maybe the other way round).
