You cannot do that with X2go so far I know. Maybe you can do it with tools like Sabayon or Pessulus for Gnome. http://live.gnome.org/Sabayon/ http://www.gnomefiles.org/app.php?soft_id=1082 For KDE: search on "KDE kiosk mode". Maybe the menu-editor has functions to hide some applications for groups of users. For so far I know there was made something to change the menu per-group for the city of Haren in the Netherlands. I can bring you in contact with the people who did it.
