Okay, so, after a few more test runs, it looks like live-build on Ubuntu
either has issues with adding a security mirror, or I'm doing something
wrong re: the way the parameters should be specified.  I still believe
this can be fixed somehow (not using a security mirror at all would be
the easiest solution, but obviously that's not a sane thing to do).
