xalan and setting output encoding in the stylesheet

Hy,

I would like to know how to change the output encoding with XALAN.
For example, when I transform an xml file to a html one, although I set 
encoding iso-latin 1 in <xsl:output> instruction, I obtain &eacute instead of � 
in the html document.
I've seen in the doc that I should use java.io.OutputStreamWriter rather than 
Streamresult, but I'm new to xalan and I don't know exactly how to do this.
Can someone help me please??
