So, Can't use updatenode (not a big deal accept during install) and can't rely on makedhcp.

Is there anyway I can help resolve this? Or am I better off reinstalling xCAT from scratch? the cluster will be accessible from the internet for the next 12 hrs or so, before delivery.

Cannot recreate your issue, I used your definition and got the following section in the /var/lib/dhcpd/dhcpd.leases
host n01 {
dynamic;
