Hello LP,
Pure SIM mode does not behave like in real flying as you do not lose 
altitude with each glide.

Good:
You could replay an igc files in XCSoar as it behaves correctly.
- place an igc file in XCSoarData - logs
- select Config - Replay - select file and press replay

Better:
Connect your device to SeeYou and replay an igc file.

Best:
Get Condor and practice the use of XCSoar in the safety of your lounge 
chair...
