Yeah ejb:blabla is enough imho. Take a look at the dtd of the
application-client.xml file. Even vendor-specific application client
file can be generated from jboss:blabla/etc tags.

Yup that's used in remote clients. Some guys use it as a means to write
service codes. So the container runs it whenever the ear file is
deployed. Some others use it to write test cases. Some others use it to
write guis (though the deployment details are stupid and I don't think
it's really a good idea to use this strategy).
