You can probably put back your international characters, but you'll have to specify xmlencoding="ISO-8859-1" in your xdoclet subtasks in your ant file. See xdoclet manual for deploymentdescriptor, jboss etc. This is really an XML issue. Search www.w3c.org for details. Can you please also send mail as ASCII, and not HTML?
