You can extend any servlet subclass. Just make sure all the binary classes in the hierarchy are on the taskdef's classpath, and all the source classes under the dir in your fileset.
If it doesn't work for you with ServletDispatcher, it's because you have configured your classpath incorrectly. Put webwork.jar and servlet.jar and any classes they need on taskdef's cp. ServletDispatcher uses log4j, so log4j must be on classpath too.
