I tried to do the same and a quick way I found is with text substitution operation 
called by ant task:

  <target name="adjustejbjar">
   <exec executable="cmd">
   <arg value="\/C" /> 
   <arg value="type ejb-jar.xml | sed 's/<\/ejb-jar>/new entries\n<\/ejb-jar>/g' > 
newejb-jar.xml" /> 
   </exec>
  </target>

  
Not so clean, but it works. Of course  after it, copy newejb-jar.xml and overwrite 
original ejb-jar.xml

(note that is required unix 'sed' command for windows. unix commands for windows are 
free in gygwin32. Note also that you may have trouble with the 'new line' that should 
match \n, if so, then don't use the '\n'.)
