You'll want to dump the XML using virsh, modify it, and then re-create the domain with the new XML. Xen doesn't have any support for USB delegation yet, however, I do see these options listed in the qemu-dm source. This particular option is implemented for linux only.
The only option we have tried is usbdevice='tablet' which makes qemu use its absolute-addressing tablet mouse, instead of the standard relative-addressing mouse it usually uses. E.
