You specify the cell as "l" which means one line, left aligned. If you
wish to insert a longer text, you have to use the paragraph mode, e.g.
p{5cm}. Thus the table header could be:
\begin{longtable}[l]{lllp{5cm}}
The same is valid for normal tables. You can find further valuable
information in the book The LaTeX Companion.
