You can
either
try to reconfigure and remember to provide at least one mode when your config program asks you about "Modes for 8bpp"
or
just load in some text editor the configuration file of your X windows. Usually it lives in /etc/X11 and is in most cases named XF86Config or very similar. Most possibly there will be lines looking like (remember, that's guessing):
Section "Screen"
Identifier "Screen0"
Device "Card0"
Monitor "Monitor0"
DefaultDepth 8
....
EndSection
To use X windows in 8 bit color mode, you'll want to ALSO find BETWEEN lines 'Section "Screen"' and 'EndSection' something looking like (par example!):
SubSection "Display"
Depth 8
Modes "1024x768"
EndSubSection
...
You can easily type these lines in, save the file and try restarting your X windows.
