Normally you would do it with an admin program, but you can do it
manually if you stop xmail then:
In the custdomains put a file name <yourdomain>.tab
in the file put a line with:
"smtprelay"     "ip of exchange"

Go to the tabindex directory and remove the domains.* file and then
restart xmail.

That's all you need to do to xmail. You can then test it by using your
mail program to send mail directly to the xmail server and it should
forward it to the exchange server. Once you are happy with it then make
the changes to the DNS so that mail goes directly to the xmail server
for your domain.
