Setting correct permissions works fine for the case you think of. I prefer not having cleartext passwords in log files because if I'm debugging someone's failing mail fetch attempts and have them visiting in my office, I would prefer being able to safely browse log file contents without having to try to obscure the view of my monitor from the visitor.
