Simple, go to the project page: http://xmailserver.org/
See under section Download a source file appopriate for your platform
(Linux/Unix or Windows).
Install them on your development machine who must be able to compile C++
programs, search in the source for the identification message, change it
to your will and rebuild binary package. Use it. The sources are C++
standard so you don't need special knowledge except for kowing to build
C++ programs for your platform of choice, you may do that yourself or
hire a C++ programmer to do the modifications for you and build a custom
package. If you're plannig to sell that package outside your company the
GPL license impose you to also give the customer the sources and
modifications that you've made.
The current version of Xmailserver is 1.17 and not 1.7 that is an
obsolete version, in the GNU world when a program will have a major
enhancement or feature added the major version is increased, in the case
of Xmailserver version 2.0 and up will be able to do IMAP mail delivery
along with the actual POP3, that's why the major version number increased.

Hope this fully answer your questinons.
