Why not set up a second server with a new IP address and point the MX of
one of the domains to that machine? Move the domain directory tree of
the moved domain to the new server and setup a custom domain to
smtprelay the old domain from the old server to the new. That way mail
won't get lost as the dns change propagates. And if you want to the old
server becomes a secondary MX for the moved domain. If you want this
instead of changing the MX for the moved domain just add a new one with
a lower precedence that points to the new server.
