I'd recommend installing SpamAssassin on a separate box. I have it running on SUSE Linux 9.1, and am about to install another on Fedora Core 3 (which seems to be a better choice). I am a Windows guy through and through... yet, I was able to set up SpamAssassin with minimal hassle.
Then, on your Windows XMail box (which is what I use, like you), I have a filter (.NET EXE) that you can use. It goes in POST-DATA filter and will "554 Transaction failed - This looks like spam" any emails that come back from the SA box as spam. The filter is simple... takes just two parameters... FILE, and IP (of spamassassin box that is running SpamD). It also records a log file showing rejected emails... in XMail's SMTP log format. This filter works great in conjunction with my already published POST-DATA filter for anti-virus scanning.
