I have been using XXE on Debian (and Ubuntu) with success for a while
and I see at least two solution to your problem!

The first one is to change the default Java machine alternative to the
Sun JVM (you can use galternatives if you want a GUI for that). This
shouldn't break OpenOffice.

The second one is to edit the XXE startup scrip so that it runs directly
the Sun JVM (you can just replace "java" by the Sun "java" command full
path for that).
