I'm not 100% sure to understand. Is this true?
[1] You can type a German Umlautes normally with your keyboard.
[2] When you save your DocBook file, you get something looking like
random characters and you prefer to get "ü", "ä", etc.

If this is true, Simply use Options|Options, Save section and replace
default encoding "UTF-8" by "US-ASCII". That's it.

After that, you can reopen your UTF-8 files and use "Save" or "Save As"
to get "ü", "ä", etc.
