I don't see how to do "DocBook|Convert Document|Convert to PDF" Please
direct me to the particular page in the documentation that shows how to do
this?

Both XMLmind XML Editor Standard Edition and Professional Edition
support XSLT.

For example, if you open a DocBook document and use DocBook|Convert
Document|Convert to HTML, an XSLT style sheet is used to convert DocBook
to HTML.

In addition to XSLT, Professional Edition supports XSL-FO (through the
use of XSL-FO processor *plug-ins* -- see
http://www.xmlmind.com/xmleditor/plugins.shtml). For example, if you
open a DocBook document and use DocBook|Convert Document|Convert to PDF,
an XSLT style sheet is used to convert DocBook to XSL-FO and then, an
XSL-FO processor (Apache FOP *or* RenderX XEP used through their
respective plug-ins) is used to convert XSL-FO to PDF.

The same approach is used to convert XML to RTF or WordprocessingML.
