To my knowledge, unlike with other DTDs such as XHTML transitional, DocBook has no attribute which could be used to center a table or a para. Therefore, I think that you cannot do what you want with XXE or with any other XML editor. However, because with XML-based technologies content is cleanly separated from presentation: * You can customize the CSS style sheet to make your DocBook document look like you want on screen. * You can customize the XSLT style sheet to make your DocBook document look like you want after converting it to HTML or to PDF.
