For now, you cannot do that for a DocBook *5* file: the XMLmind XML Editor configuration for DocBook 5 lacks the process commands which are used to convert DocBook 5 to PDF, HTML, RTF,etc. This has been done to discourage using the DocBook *5* for production use. However, next release of XMLmind XML Editor will make the XMLmind XML Editor configuration for DocBook 5 on par with the one for DocBook 4. This means that you'll find the "Convert" menu you need.
