Right. There is a way to specify a custom XSLT stylesheet, but not using
"Change Document Conversion Parameters".

You'll have to manually customize the map and/or bookmap and/or topic
configuration for that. How to do this is explained here:

XXE creates a customization of the  map and/or bookmap and/or topic
configuration behind the scene. Such ``automatic'' configuration files
are found in XXE_user_preferences_dir/custom/XXX/, where "XXX" is the
mangled name of the configuration.
