You'll easily find all the Mac keyboard shortcuts in the corresponding quick reference card. See "Quick reference cards" in http://www.xmlmind.com/xmleditor/documentation.html

The above quick reference card says that the keyboard shortcut for toggling INS/OVR modes in "Esc F1", that is, press Esc, release Esc, then press F1 and release F1 (and not press Esc and F1 at the same time).

I tried that on my MacBook Pro and it didn't work (probably because the MacBook Pro keyboard does not have a real F1 key).

That's why we'll change this Mac keyboard shortcut in the next release of XMLmind XML Editor.

Meanwhile, I'm afraid you'll have to use the INS/OVR toggle button that you already have spotted in the status bar (http://www.xmlmind.com/xmleditor/_distrib/doc/help/wh/overwrite_mode.html).
