One of the other options you mention is adding calibration info to a xorg.conf.d file. It share a common disadvantage with udev method in that it requires write access to files generally written to by root. As you indicate support for these xorg.conf.d files may require recent xserver. However, this option seems more appealing as touch screens are closely aligned with X (not a lot of value in moving this information outside of X but I could be wrong). Maybe the xerver should support maintaining state for xinput based (or other) devices? For example, it would save the claibration values currently being used and load them on startup.
