You cannot.  You'll need to edit the startx script yourself.  Assuming that 
does what you want, file a bug report at 
https://bugs.freedesktop.org/enter_bug.cgi?product=XQuartz&component=New%20Bugs 
requesting that this be supported by a defaults option in the future.
