Hi Arian, I haven't seen a modern ebook reader, so I don't know how they perform, but the older ones had terrible refresh rate, which made any kind of notetaking application very painful to use. The one e-ink device I have seen run xournal (or something close to it) is the Entourage eDGe (circa 2010), which was a rather unusual beast (two screens, one LCD running Android, and the other e-ink running I don't know what but their notetaking app was a slightly customized version of xournal -- over GTK, so I'm pretty sure there was some other OS under the hood besides Android). Running xournal on the e-ink screen was in my opinion not a smart move -- refresh rate issues for erasing pixels (as opposed to adding new ones) made the select tool (or even the eraser) rather unpleasant.
It might be that modern e-readers have overcome this issue. There remains a big unknown about how to get xournal to run on one, if at all possible. As for myself, I'm continuing with the Thinkpad tablets (currently a Thinkpad Yoga S1, but if I had to buy a new one I'd look closely at the X1 Yoga), though I also briefly thought of the Surface (Pro or Book) as a valid alternative. Do let us know if you end up getting an e-reader and managing to run xournal on it.
