I think this is an issue of interface. I personally dislike endless paper (ie. Microsoft One Note). I want to know that when i zoom to a certain size, I can see the entire page (or the fraction that I am used to).
So endless paper in both directions is a bad idea. in one direction, maybe, but the challenge is: pages give us an easy way to jump to a given location. It is an extra addressing space. With endless you lose that. perhaps the solution is to allow annotations to span page breaks, and to immediately move to the next page when they are moved.
