You've said that it works in console (I would expect this from any card) 
as the console runs at a very low screen resolution.  It isn't until you 
try to boot into X Windows that the OS tries to do anything fancy with the 
graphic card.  At this point it is hitting the problems with drivers and 
the fact that the board was designed for the Mac.  

You have said that it is being (correctly) detected as 1024x768 - I would 
suggest that the drivers being used are not 100% correct for your board - 
resulting in the junk.  The only real suggestion I have is to see if the 
producer of the board has a Linux specific driver.  (If not hassle them, 
as Linux is now a major operating system and deserves full support)

Have you tried running the card at a lower screen resolution (800x600)?  
If it does work at this resolution, then I suggest that you put up with it 
until you can either get a full work around or find a board specific 
driver.

Most of the above information is *not* Linux specific and works in 
diagnosing under MacOS, Windows, and any other modular type computer 
system.  it doesn't contain anything extra-ordinarily exciting.  Just a 
methodical way of looking at the information given.
