I use only one panel, too. I would put digital clock in format %H:%M; tooltip is for additional information about date.
I use only one workspace. Power user can switch by keyboard shortcuts. Adding rows in the Workspace Switcher and/or reducing the number of workspaces could be considered. I want to use such a style that shows all user interface elements. E.g. Clock's frame and Window Button's handle, if they are chosen. I don't care about sorting of Windows Buttons, but I use Windows Grouping setting Always; it is handy e.g. if you have several Firefox windows, and it shows different applications in task bar better, if there are many applications with many windows open. I don't use desktop for file management; I usually have windows on it, and I don't need the Show Desktop button. Well, I don't use Trash bin either, I delete by sift-delete, since bare delete does not free space. BTW. It is odd, that when the mouse is on a random window and I press Ctrl-Esc, I get a menu that has an item to e.g. create new folder.
