Atril is the default for xubuntu 18.04+. You can still use evince. If not already installed, try sudo apt-get update sudo apt-get install evince Then, right click on a PDF doc, select Properties, and then select the app to open it under "Open With:" Evince along with Atril should be listed as one of the options. This setting will subsequently apply to all your PDFs. I actually prefer atril, as it behaves like evince used to and seems to be better suited for Xubuntu than evince (Atril still has a menu, for instance). The first time you use any app, you may need to adjust printer settings.
