Ubuntu allows for partitioning It's the "something else" option during install. I also got a prompt to allow for encryption of /home
I even put /home on a different drive than / (root). Same for /swap. You'll needed to delete old partitions abd be due to allow space for uefi boot. No suggestions for partitioning, only full disk encryption, even though to 'undo' it is a major undertaking, and it is not supported will by many cpus.
