As to personal information, well, read the site's privacy policy.
This is hardly ever easy since most of them are written by lawyers
and are intentionally written to obfuscate and confuse the average
reader who is not an attorney. Often, legitimate businesses on the
web state simply something like "We will NOT share any of your
information without your explicit permission or in response to a
legal request." (that usually means a subpeona issued by a court,
although in the U.S. now, various "homeland security" type agencies
can get your information simple by demanding it, with no approval by
any court.)
