You must be aware that changes made to your tags aren't instantly reflected to the posting form because there is some caching involved for it to be fast. I've also experienced the issue with the dropdown menu, too; after giving it space to get some air, I've found that my changes are reflected properly.
When you try to get the results for a deleted tag, does it return some bookmarks? If so, maybe the tag wasn't entirely deleted?
