I think it's a safe bet that if you see some device running (embedded) Linux it's probably using Yocto in some form (unless they used buildroot, that is).

As for installed userbase, the open settopbox project openpli.org has a install base that is probably somewhere in the 10 to 100 million devices. Just the openpli server generates over 4TB a month in traffic each month, which mostly consists of fetching "packages.gz" files for the weekly upgrades. Again, out of respect for people's privacy there aren't any solid numbers.
