Thank you for answering those questions, Steve. Number 3 in
particular was an eye-opener for me.
When the Quick Input panel was preserving old information (after I'd
dismissed it without creating a note), I assumed it was just
preserving the second-last clipboard item. It didn't occur to me that
I could add further bits of text to the main content field and *they*
would be preserved too.
I know, I know -- I'm a bit slow. :-)

Not at the present. The best solution I can offer you is to create
a new tag with the correct name, search for items tagged with the
old name, add the new tag to those items, and finally, delete the
old tag.
We recognize that this is not a particularly elegant solution.
2. In the Quick Input panel, if I've tabbed into a note's main
content field, is it possible to "Create" that item from the
keyboard? Or must I go to the mouse to click on "Create"?
The Enter key will dismiss the Quick Input Panel for you, creating
the item in the process.
3. Is there a setting I can change so that the Quick Input panel
always uses the most recent item from the clipboard?
Unless you are bringing the Quick Input panel up, and then
dismissing it without saving the item, it should always have the
newest clipboard contents. If you are getting the banner that says
the old information was preserved (this is so you can create a
single note with multiple trips to the Quick Input panel), you can
type Command-Shift-A (the same as in Safari) to Auto Fill the panel
with the fresher content.
