That's an encoding issue. Usually, it's due to the fact that the
sender used a software that doesn't properly specify the encoding used
in the message and all Entourage can do is try and guess.
It could also be written with an alphabet you have no font for and
that therefore cannot be displayed on your Mac.
You could try using Format>Character set and select a different
encoding method there.
