Jon,
In the Applications > Utilities folder of OS X there is an app called
Activity Monitor. Please run that with Entourage open and tell us how much
CPU Entourage is taking up and how much RAM/Memory.

My gut says this is an issue where you have thousands of messages and they
are causing a significant drag on both CPU and especially memory/RAM.
