The original statement was that categories in Entourage don't sync with
categories in Exchange.  They do sync with Exchange, if you're on Exchange
2007 (SP1, RU4 or later -- and SP2 was just released today with lots of
improvements) and are using Entourage for Web Services.

The categories icon in the toolbar, which has checkboxes, serves two
purposes: a checkmark next to a category tells you that the category is
applied to that item, and you can also check the box to apply that category
to an item.
