I suspect you're hitting the "Send" button when what you really want is the "Send Later" button. Open a new mail message and then select View --> Customize Toolbar... Add the "Send Later" button to your toolbar and delete the "Send" button if you desire. Optionally, instead of typing Command-Return to send a message *now*, you can type Shift-Command-Return.
