If you go to Entourage menu --> Preferences... --> General Preferences --> Address Book, do you have "Automatically match message categories to senders' categories" enabled? If so, you can disable it, however, this will stop Entourage from assigning categories to all your incoming messages, not just your own. You could work around all this by using rules instead, but I wouldn't think it would be worth the hassle.
