A safe option would be to create a Group in your Address Book and add contacts for those you regularly correspond. Since ISPs frown on sending to large groups, I would keep each group to 50. Send a message to your group(s) letting them know you will be unavailable and when you will return. Setting up a Rule can easily go horribly wrong and you have to keep Entourage open and running the entire time unless you can set something on your server to do this for you. Then if it replies to a mailing list list this one, it can cause a loop where the entire list gets spammed with your 'away' message. Not good!
